A festive Italian meal generally begins with antipasto. A variety of appetizers, which are known as antipasti -- literally, before the meal. These antipasti vary considerably from place to place in Italy, but they will often include a selection of pickles and other firm vegetables, which are known as an antipasto misto.

¼ head Romaine Lettuce ¼ head Red Radicchio 1 head Belgian Endive ¼ head red-leaf lettuce 2 tbsp extra-virgin olive oil 4 tbsp Balsamic Vinegar ½ tsp salt Sprinkle Freshly ground Black Pepper
Wash and dry (using a salad spinner works really well) romaine lettuce leaves, red radicchio, belgian endive and red-leaf lettuce and put in regrigerator until ready to use.
